Ingredients

4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

3 tablespoons olive oil

Zest and juice of 1 lemon

3 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Herb Mixture: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper until well combined.

Arrange the Vegetables: Place the trimmed asparagus on one side of the baking sheet. Drizzle half of the herb mixture over the asparagus and toss to coat evenly.

Add the Salmon: Place the salmon fillets on the other side of the baking sheet. Pour the remaining herb mixture over the salmon, ensuring each fillet is well coated.

Bake: Arrange lemon slices on top of the salmon fillets for added flavor. Transfer the baking sheet to the oven and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

Serve: Remove the sheet pan from the oven and sprinkle fresh parsley on top. Serve immediately, garnished with additional lemon slices if desired.
