For the Patty:

1 lb ground beef (80/20 blend)

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 slices of American or cheddar cheese

For the Secret Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon pickle relish

1 teaspoon Worcestershire sauce

Salt and pepper to taste

For the Melt:

8 slices of rye or sourdough bread

2 tablespoons butter (softened)

1 onion, thinly sliced

1 tablespoon olive oil

Instructions
 

Prepare the Secret Sauce:

    - In a mixing bowl, combine mayonnaise, ketchup, Dijon mustard, pickle relish, and Worcestershire sauce. Mix well. Season with salt and pepper to taste. Set aside.

      Make the Patty:

        - In a large bowl, combine ground beef, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix just until combined, be careful not to overwork the meat.

          - Form into 4 equal patties, making a slight indentation in the center of each patty (this helps them cook evenly).

            Sauté the Onions:

              - In a skillet over medium heat, add the olive oil. Once hot, add the sliced onions and cook, stirring occasionally, until caramelized (about 8-10 minutes). Remove from heat.

                Cook the Patties:

                  - In a separate skillet over medium-high heat, cook the patties for about 3-4 minutes on one side. Flip and place a slice of cheese on top of each patty. Cook for another 3-4 minutes or until the cheese is melted and the burger is cooked to your desired doneness.

                    Assemble the Patty Melt:

                      - Butter one side of each slice of bread. On the unbuttered side of 4 slices, spread a generous amount of the secret sauce.

                        - Place the cooked patties on top of the sauce. Add a layer of caramelized onions, then top with the remaining slices of bread, buttered side facing out.

                          Cook the Melts:

                            - In the same skillet used for the patties, carefully place the assembled sandwiches. Cook over medium heat until golden brown (about 4-5 minutes), then flip and cook the other side until golden and crispy.

                              Serve:

                                - Slice the patty melts in half and serve with extra secret sauce on the side for dipping.
