Ingredients

1 pound Italian sausage (sweet or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

6 cups low-sodium chicken broth

2 cups cheese tortellini (fresh or frozen)

1 can (14 oz) diced tomatoes (with juices)

1 cup fresh spinach (or kale, chopped)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh parsley for garnish (optional)

Instructions

Cook the Sausage: In a large stock pot, heat the olive oil over medium heat. Remove the casing from the sausage and crumble it into the pot. Cook until browned, about 5-7 minutes. Stir occasionally to break it up. Once cooked, remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.

Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the onion becomes translucent. Stir in the garlic and cook for another 1-2 minutes until fragrant.

Build the Soup Base: Pour in the chicken broth and add the diced tomatoes (including the juices). Stir in the dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a gentle boil.

Add the Tortellini: Reduce the heat to a simmer and add the cheese tortellini to the pot. Cook according to the package instructions, usually about 5-7 minutes, until the tortellini are tender.

Final Touches: After the tortellini is cooked, return the sausage to the pot. Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Taste and adjust the seasoning if necessary.

Serve: Ladle the soup into bowls and top with grated Parmesan cheese and a sprinkle of fresh parsley if desired. Enjoy your delicious, hearty Sausage Tortellini Soup!
