1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

½ cup powdered sugar

½ teaspoon sea salt

½ cup unsalted butter, chilled and diced

1 large egg yolk

3 tablespoons ice water

1 cup dark chocolate (70% cacao), chopped

½ cup heavy cream

¼ cup granulated sugar

1 teaspoon pure vanilla extract

Flaky sea salt, for garnish

Instructions
 

Prepare the Crust:

    - In a large mixing bowl, whisk together flour, cocoa powder, powdered sugar, and ½ teaspoon of sea salt until combined.

      - Add the chilled, diced butter into the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

        - In a small bowl, whisk together the egg yolk and ice water, then add to the flour mixture. Mix gently until combined.

          - Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

            Blind Bake the Crust:

              - Preheat the oven to 350°F (175°C).

                - On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch tart pan. Press the dough into the pan and trim the excess.

                  - Prick the bottom of the crust with a fork and place a piece of parchment paper over it. Fill with pie weights or dried beans.

                    - Bake for about 15 minutes. Remove the parchment and weights, then bake for an additional 5-7 minutes until firm. Let cool completely.

                      Make the Chocolate Filling:

                        - In a small saucepan, heat the heavy cream over medium heat until just simmering. Do not boil.

                          - Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then whisk until smooth and fully melted.

                            - Stir in the granulated sugar and vanilla extract until combined and let it cool slightly.

                              Assemble the Tart:

                                - Pour the chocolate mixture into the cooled tart crust, smoothing it out with a spatula.

                                  - Refrigerate for at least 2 hours or until set.

                                    Serve:
