1 cup unsalted pistachios, shelled

1 cup cream cheese, softened

1 cup heavy cream

1 cup sweetened condensed milk

½ cup milk

2 tablespoons rose water

1 teaspoon vanilla extract

½ cup sugar

½ cup crushed graham crackers

Optional for garnish: additional crushed pistachios, edible rose petals

Instructions
 

Begin by toasting the pistachios in a dry skillet over medium heat for about 5 minutes or until fragrant. Allow them to cool, then roughly chop them and set aside a few for garnish.

    In a medium bowl, mix the softened cream cheese and sugar until smooth.

      Gradually stir in the heavy cream, milk, rose water, and vanilla extract until the mixture is well combined and creamy.

        Add the chopped pistachios into the mixture, reserving some for topping later.

          Fold in the crushed graham crackers to create a cheesecake-like texture throughout the ice cream base.

            Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (usually about 20-25 minutes) until it reaches a soft-serve consistency.

              Transfer the churned ice cream into an airtight container. Sprinkle the reserved pistachios on top and gently swirl them into the ice cream.

                Cover and freeze for at least 4 hours or until firm.

                  Serve the ice cream in bowls or cones, garnished with additional crushed pistachios and edible rose petals for a beautiful presentation.
