Ingredients
  

4 medium sweet potatoes, peeled and cubed

3 tablespoons olive oil

2 tablespoons maple syrup

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, maple syrup, cinnamon, nutmeg, smoked paprika, salt, and pepper. Mix well.

      Add the cubed sweet potatoes to the bowl and toss until they are evenly coated with the spiced oil mixture.

        Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes or until they are tender and caramelized, flipping halfway through for even cooking.

            Once done, remove from the oven and let cool for a few minutes.

              Garnish with fresh parsley or cilantro if desired, and serve warm.
