1 cup fresh strawberries, hulled and halved

1 tablespoon balsamic vinegar

1 tablespoon honey

1 cup ricotta cheese

1 teaspoon vanilla extract

1 teaspoon lemon zest

4 slices of thick-cut bread (sourdough or rustic bread works well)

2 tablespoons olive oil

Sea salt, to taste

Fresh mint leaves, for garnish (optional)

Roast the Strawberries: Preheat your oven to 400°F (200°C). In a medium bowl, combine the halved strawberries, balsamic vinegar, and honey. Toss until the strawberries are well coated. Spread them on a baking sheet lined with parchment paper. Roast for about 15-20 minutes, or until the strawberries are soft and have released their juices. Remove from the oven and let cool slightly.
