1.5 lbs Brussels sprouts, trimmed and halved

3 tablespoons olive oil

Salt, to taste

Black pepper, to taste

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

1 tablespoon Dijon mustard

2 cloves garlic, minced

1/4 cup grated Parmesan cheese (optional)

1/4 cup chopped walnuts or pecans (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Brussels sprouts: In a large bowl, toss the trimmed and halved Brussels sprouts with olive oil, salt, and black pepper until fully coated.

      Roast the Brussels sprouts: Spread the Brussels sprouts in a single layer on a large baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside, stirring halfway through for even cooking.

        Make the balsamic glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan over medium heat, combine the balsamic vinegar, honey (or maple syrup), Dijon mustard, and minced garlic. Stir occasionally and let it simmer for about 5-7 minutes, or until the mixture thickens slightly. Remove from heat.

          Combine: Once the Brussels sprouts are done roasting, transfer them to a large serving bowl. Drizzle the balsamic glaze over the Brussels sprouts and toss to coat evenly.
