Ingredients

2 cups fresh blueberries

2 tablespoons honey

1 tablespoon olive oil

Pinch of sea salt

4 slices of rustic bread (such as sourdough or whole grain)

1 cup ricotta cheese

1 teaspoon vanilla extract

Zest of 1 lemon

Fresh mint leaves for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C).

In a baking dish, combine the fresh blueberries, honey, olive oil, and a pinch of sea salt. Toss gently to coat the blueberries evenly.

Roast the blueberries in the preheated oven for 15-20 minutes, or until they are softened and start to burst. Remove from the oven and allow to cool slightly.

While the blueberries are roasting, prepare the whipped ricotta. In a mixing bowl, combine the ricotta cheese, vanilla extract, and lemon zest. Using an electric mixer or a whisk, beat until smooth and creamy. Adjust sweetness if desired.

Toast the slices of rustic bread until golden brown.

Spread a generous layer of whipped ricotta on each slice of toasted bread.

Top with the warm roasted blueberries, ensuring to drizzle any remaining juices on top for added flavor.

Garnish with fresh mint leaves if using. Serve immediately and enjoy your delightful Roasted Blueberry Toast!
