Ingredients
  

1 lb fresh shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Juice of 2 limes

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped for heat

Instructions
 

Begin by cooking the shrimp. In a pot of boiling salted water, add the shrimp and cook for 2-3 minutes or until they turn pink. Drain and set aside to cool.

    In a large mixing bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, and cilantro.

      Once the shrimp have cooled, chop them into bite-sized pieces and add them to the bowl with the vegetables.

        In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper (and jalapeño if using) until well combined.

          Pour the dressing over the shrimp and avocado mixture, and gently toss to combine. Be careful not to mash the avocados.

            Taste the salad and adjust seasoning if needed. You can add more lime juice, salt, or pepper based on your preference.

              Serve immediately or refrigerate for up to 30 minutes before serving to let the flavors meld together.
