Ingredients

4 cups fresh pineapple, peeled, cored, and chopped

1 cup coconut water (or regular water)

1/2 cup granulated sugar (adjust based on sweetness preference)

Juice of 1 lime

Pinch of sea salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Pineapple: In a blender, add the chopped pineapple, coconut water, sugar, lime juice, and a pinch of sea salt. Blend until smooth and well combined.

Taste the Mixture: Check the sweetness and adjust by adding more sugar if desired. Blend again if you add more sugar.

Strain (Optional): If you prefer a smoother texture, pour the mixture through a fine-mesh sieve into a large bowl to remove the pulp. Use a spatula to press down and extract as much liquid as possible.

Chill the Mixture: Cover the bowl and refrigerate the mixture for about 1-2 hours, or until it's nicely chilled.

Freeze the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until the sorbet reaches a soft-serve consistency.

Transfer and Freeze: Transfer the sorbet to an airtight container, smoothing the top, and place it in the freezer for at least 4-6 hours, or until firm.

Serve: Scoop the sorbet into bowls or cones. Garnish with fresh mint leaves if desired. Enjoy a refreshing scoop on a hot summer day!
