2 large cucumbers, peeled and diced

3 ripe tomatoes, chopped

1/2 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine diced cucumbers, chopped tomatoes, and sliced red onion.
