Ingredients
  

1 cup fresh raspberries (or frozen, thawed)

1/2 cup granulated sugar

1 cup water

1/4 teaspoon vanilla extract

1 tablespoon freshly squeezed lemon juice

2 cups club soda or sparkling water

Ice cubes

Fresh raspberries and mint leaves for garnish (optional)

Instructions
 

Prepare the Raspberry Syrup:

    In a small saucepan, combine the fresh raspberries, granulated sugar, and water. Heat over medium heat, bringing it to a gentle simmer. Stir occasionally until the raspberries break down and the sugar dissolves completely (about 5-7 minutes).

      Strain the Mixture:

        Once the raspberries have broken down, remove the saucepan from the heat. Use a fine mesh strainer to strain the liquid into a bowl or measuring cup, pressing down on the raspberries to extract as much liquid as possible. You should have about 1 cup of raspberry syrup.

          Add Flavor:

            Stir in the vanilla extract and lemon juice to the warm raspberry syrup. Let it cool to room temperature.

              Assemble the Drink:

                In a glass, add ice cubes to fill halfway. Pour in about 1/4 cup of the raspberry syrup. Top with club soda or sparkling water, giving it a gentle stir to combine.

                  Garnish and Serve:

                    Garnish with fresh raspberries and a sprig of mint if desired. Serve immediately and enjoy the refreshing taste of your homemade Raspberry Italian Soda!
