8 oz rice noodles

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, thinly sliced

1 cup broccoli florets

1 cup sugar snap peas

2 carrots, julienned

3 green onions, chopped

¼ cup soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon crushed red pepper flakes (optional)

1 tablespoon toasted sesame seeds (for garnish)

Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and set aside.

    Sauté Aromatics: In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, sauté for about 1 minute until fragrant.
