1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

3 cloves garlic, minced

Juice and zest of 1 lemon

1 teaspoon dried oregano

Fresh parsley, chopped (for garnish)

8 wooden or metal skewers

8 oz sushi-grade tuna, finely diced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon Sriracha (adjust to spice preference)

1 avocado, diced

Juice of 1 lime

Sea salt, to taste

8 small corn tortillas

1/4 cup chopped green onions

Cilantro leaves (for garnish)

1 lb calamari, cleaned and sliced into rings

2 cups mixed greens (arugula, spinach, or your choice)

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

3 tablespoons olive oil

2 tablespoons red wine vinegar

Salt and pepper, to taste

Lemon wedges (for serving)

Instructions
 

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

    In a large mixing bowl, combine olive oil, minced garlic, lemon juice, lemon zest, paprika, dried oregano, salt, and pepper.

      Add the shrimp to the bowl and toss to ensure they are evenly coated with the marinade. Let them marinate for at least 15 minutes.

        Preheat your grill or grill pan to medium-high heat.

          Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.

            Grill the skewers for 2-3 minutes on each side or until the shrimp turn pink and opaque.
