1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

8 small flour tortillas

1 cup enchilada sauce (store-bought or homemade)

2 cups shredded cheddar cheese

1/2 cup sour cream (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Beef: In a skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.

    Season the Meat: Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes to let the flavors combine. Remove from heat.

      Assemble the Enchiladas: Preheat your oven to 375°F (190°C). On a clean surface, lay out a tortilla, and place about 1/4 cup of the beef mixture in the center. Sprinkle with a little cheese, then roll the tortilla tightly, placing the seam-side down in a baking dish. Repeat with remaining tortillas.

        Add Sauce and Cheese: Once all enchiladas are rolled, pour the enchilada sauce evenly over the top. Sprinkle the remaining shredded cheese over everything.

          Bake: Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and melted.

            Serve: Remove from oven, let cool for a few minutes. Serve hot, topped with sour cream and garnished with fresh cilantro.
