1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (preferably whole or buttermilk)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract (optional)

Cooking spray or additional butter for the skillet

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.

    In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract (if using). Mix until well combined.

      Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula or a wooden spoon. Stop mixing when just combined; a few lumps are okay!
