1 lb ground beef (or turkey for a lighter option)

1 cup cooked rice (white or brown)

3 medium bell peppers (any color), diced

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1 cup corn (frozen or canned)

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium-high heat, add the ground beef (or turkey) and cook until browned, breaking it apart as it cooks. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Cook for about 3-4 minutes, or until the onion becomes translucent.

        Combine Ingredients: Stir in the diced bell peppers, cooked rice, diced tomatoes (with juice), tomato sauce, corn, Italian seasoning, paprika, salt, and pepper. Mix thoroughly until well combined.

          Transfer to a Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

            Add Cheese: Sprinkle shredded cheese equally over the top of the casserole.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley or basil if desired. Serve warm and enjoy!
