Ingredients

1 lb ground beef

4 slices of rye bread

4 slices of Swiss cheese

1 medium onion, thinly sliced

2 tbsp butter

Salt and black pepper, to taste

For the Secret Sauce:

1/4 cup mayonnaise

2 tbsp ketchup

1 tbsp sweet pickle relish

1 tsp Dijon mustard

Dash of hot sauce (optional)

Instructions

Make the Secret Sauce: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, Dijon mustard, and hot sauce (if using). Mix well and set aside.

Cook the Onions: Melt 1 tablespoon of butter in a skillet over medium heat. Add the sliced onions, season with salt and pepper, and cook until caramelized (about 8-10 minutes). Stir occasionally to prevent burning. Remove from skillet and set aside.

Form the Patties: While onions cook, divide the ground beef into 4 equal portions and shape them into patties. Season both sides with salt and black pepper.

Cook the Patties: In the same skillet, add the remaining tablespoon of butter. Cook the beef patties over medium-high heat for about 3-4 minutes on each side until browned and cooked to your desired doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty and cover the skillet with a lid to melt the cheese.

Assemble the Patty Melt: Spread a generous amount of the secret sauce on one side of each slice of rye bread. Place one slice of bread, sauce side up, on a clean surface. Top with one cheesy patty, some caramelized onions, and then another slice of bread, sauce side down. Repeat for the second patty melt.

Grill the Patty Melt: Wipe down the skillet and return it to medium heat. Add the assembled patty melts and grill for 3-4 minutes per side until the bread is golden brown and crispy. If necessary, reduce heat to ensure the cheese melts before the bread burns.

Serve: Remove from the skillet, slice in half, and serve hot with extra secret sauce on the side for dipping!
