1 pound breakfast sausage (mild or spicy, according to preference)

1/4 cup all-purpose flour

2 cups whole milk

1/4 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon butter (optional)

Biscuits for serving (store-bought or homemade)

Instructions
 

In a large skillet over medium heat, add the breakfast sausage. Break it up with a spatula and cook until browned and fully cooked through, about 7-10 minutes.

    Once the sausage is browned, sprinkle the flour over the sausage, stirring to combine. Cook for 1-2 minutes to remove the raw flour taste, stirring frequently.

      Gradually pour in the milk, stirring continuously to avoid lumps. The mixture will start to thicken as it cooks.

        Add the crushed red pepper flakes if using, and season with salt and black pepper to taste. Continue to cook for an additional 5-7 minutes, stirring often, until the gravy reaches your desired thickness.

          If the gravy is too thick, add a little extra milk until the consistency is just right. If it’s too thin, let it cook a bit longer.

            Optionally, stir in a tablespoon of butter for added richness.

              Serve the sausage gravy warm over freshly baked biscuits.
