Ingredients
  

1 lb beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

3 carrots, sliced

3 celery stalks, diced

1 cup mushrooms, sliced

1 teaspoon dried thyme

2 bay leaves

8 cups beef broth

1 cup pearl barley

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add the chopped onion, carrots, celery, and mushrooms. Sauté for about 5-6 minutes until the vegetables start to soften. Add the minced garlic and cook for an additional minute until fragrant.

      Return the browned beef to the pot. Stir in the thyme, bay leaves, and beef broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour to allow the flavors to meld.

        After an hour, add the pearl barley to the soup, stirring to combine. Continue to simmer for an additional 30-40 minutes, or until the barley is tender.

          Taste and adjust seasoning with salt and pepper as needed. Before serving, remove the bay leaves and stir in the fresh parsley.

            Ladle the soup into bowls and enjoy warm with crusty bread or your favorite crackers.
