Ingredients

1 lb large shrimp, peeled and deveined

1 cup Parmesan cheese, grated

1 cup panko breadcrumbs

2 cloves garlic, minced

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp dried parsley

2 large eggs

2 tbsp fresh lemon juice

Olive oil spray or a drizzle for baking

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a shallow bowl, mix together the grated Parmesan cheese, panko breadcrumbs, minced garlic, paprika, black pepper, salt, and dried parsley until well combined.

In another bowl, whisk the eggs along with the fresh lemon juice.

Dip each shrimp into the egg mixture, allowing any excess to drip off, then coat it thoroughly in the Parmesan-panko mixture. Press lightly to ensure the coating sticks.

Place the coated shrimp on the prepared baking sheet, leaving space between each piece.

Spray the shrimp lightly with olive oil or drizzle a small amount over them to promote browning.

Bake in the preheated oven for about 12-15 minutes or until the shrimp are pink, opaque, and the crust is golden and crispy.

For added crunch, you may turn on the broiler for the last 1-2 minutes, keeping a close eye to prevent burning.

Serve immediately with lemon wedges and your favorite dipping sauce.
