4 bone-in, skin-on chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, chopped (red or green)

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen peas (optional)

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 4-5 minutes until softened.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the rice to the skillet and stir for 2 minutes to toast it slightly.

          Pour in the chicken broth, and season with paprika, thyme, salt, and black pepper. Stir well to combine.

            Nestle the chicken thighs skin-side up into the rice mixture. Spoon a little of the broth over the chicken pieces to moisten them.

              If using peas, sprinkle them around the chicken and rice.

                Cover the skillet with a tight-fitting lid or aluminum foil, and place it in the preheated oven.

                  Bake for 45-50 minutes until the chicken is fully cooked and the rice is tender (internal temperature of chicken should reach 165°F or 75°C).

                    Remove from the oven, and let it rest for 5 minutes before uncovering. Fluff the rice with a fork, ensuring the flavors are well mixed.

                      Garnish with fresh parsley before serving.
