1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 ounces mixed mushrooms (cremini, shiitake, and button), sliced

1/2 cup vegetable broth

1/2 cup heavy cream

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Instructions
 

Cook the Orzo: In a pot of salted boiling water, cook the orzo according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook until they release their juices and become golden brown, about 6-8 minutes. Stir occasionally.

        Combine Ingredients: Once the mushrooms are cooked, pour in the vegetable broth and bring to a simmer. Reduce the heat to low, add the cream, and stir well. Let it simmer for 3-5 minutes until the sauce thickens slightly.

          Combine with Orzo: Add the cooked orzo to the mushroom mixture. Toss to combine, adding the fresh thyme, salt, and pepper to taste. If desired, stir in Parmesan for an extra creamy texture.

            Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve immediately warm.
