1 cup orzo pasta

2 cups vegetable broth (or chicken broth)

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1 lemon (zested and juiced)

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 pound of shrimp, peeled and deveined

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Grill the Shrimp: While the orzo is cooking, heat the olive oil in a grill pan over medium-high heat. Season the shrimp with salt, pepper, and oregano. Grill the shrimp for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

      Make the Creamy Sauce: In the same pot used for the orzo, add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, lemon juice, and zest. Stir to combine and then add the Parmesan cheese. Let it simmer for about 2-3 minutes until the cheese has melted into a creamy consistency.
