One Pot Mexican Rice

Ingredients
  

1 cup long-grain white rice

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup diced tomatoes (canned or fresh)

1 cup vegetable or chicken broth

1 cup black beans, drained and rinsed

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup corn (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Optional toppings: avocado slices, jalapeños, shredded cheese

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they're softened.

    Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Toast the Rice: Add the rice to the pot, stirring well to coat it with the oil. Cook for 2-3 minutes until the rice is slightly toasted.

        Combine Ingredients: Pour in the diced tomatoes, broth, black beans, corn, cumin, chili powder, smoked paprika, and season with salt and pepper. Stir everything together to combine.

          Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 18-20 minutes, or until the rice is fully cooked and the liquid has been absorbed.

            Fluff and Garnish: Once cooked, remove the pot from heat. Keep it covered for an additional 5 minutes, then fluff the rice with a fork. Stir in the chopped cilantro.

              Serve: Spoon the Mexican rice onto plates, and serve with lime wedges and any optional toppings you desire, such as avocado slices, jalapeños, or shredded cheese.
