Ingredients
  

1 pound (450g) boneless chicken thighs, cut into bite-sized pieces

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust to taste)

1 cup (240ml) chicken broth

1 can (14 oz) diced tomatoes, undrained

8 ounces (225g) penne pasta

½ cup (120ml) heavy cream

1 cup (100g) fresh spinach, roughly chopped

1 cup (100g) grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Season the Chicken: In a large pot or Dutch oven, season the chicken pieces generously with salt and black pepper.

    Sauté Chicken: Heat the olive oil over medium heat in the pot. Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

      Sauté Aromatics: In the same pot, add the minced garlic, dried thyme, and red pepper flakes. Sauté for about 1 minute until fragrant.

        Add Liquids and Pasta: Pour in the chicken broth and diced tomatoes (including juices). Stir in the penne pasta and bring the mixture to a boil.

          Cook the Pasta: Reduce heat to simmer, cover the pot, and allow the pasta to cook for about 12-15 minutes, or until al dente, stirring occasionally.

            Finish the Dish: Once the pasta is cooked, stir in the heavy cream, chopped spinach, grated Parmesan cheese, and the previously cooked chicken. Cook for another 2-3 minutes, until spinach is wilted and the sauce is creamy.
