12 oz fettuccine or spaghetti

4 cups fresh spinach, roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon lemon zest

1/2 cup lemon juice (about 2 lemons)

4 cups vegetable broth

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add the Pasta and Broth: Pour in the vegetable broth, and bring it to a gentle boil. Once boiling, add the fettuccine (or spaghetti), salt, black pepper, and red pepper flakes (if using). Stir well to combine.

      Cook the Pasta: Lower the heat to medium-low, cover the pot, and cook for about 10-12 minutes, stirring occasionally until the pasta is al dente and most of the liquid has been absorbed.

        Incorporate Spinach and Lemon: Once the pasta is cooked, add the chopped spinach, lemon zest, and lemon juice. Stir well and cook for an additional 3-4 minutes until the spinach has wilted and everything is well combined.

          Finish with Cheese: Remove the pot from heat and stir in the grated Parmesan cheese, mixing until creamy and everything is well incorporated. Adjust seasoning with salt and pepper according to your taste.
