12 oz kielbasa sausage, sliced into thin rounds

12 oz pasta (preferably penne or fusilli)

1 medium onion, diced

3 cloves garlic, minced

3 cups chicken broth

1 cup cherry tomatoes, halved

1 bell pepper (red or green), diced

1 cup fresh spinach

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese (for garnish)

Fresh basil, for garnish (optional)

Instructions
 

Sauté Kielbasa: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook until it's browned and slightly crispy, about 5-7 minutes. Remove the kielbasa from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and bell pepper. Sauté until the onion is translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Add the chicken broth, pasta, halved cherry tomatoes, Italian seasoning, crushed red pepper flakes, salt, and pepper to the pot. Stir well to combine all ingredients.

        Cook Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let the pasta cook for about 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.

          Final Touches: Once the pasta is cooked, add the fresh spinach and the browned kielbasa back to the pot. Stir well until the spinach is wilted, about 2-3 minutes.
