One Pot Ham and Pea Pasta

Ingredients
  

8 oz (225g) pasta (penne or fusilli work well)

1 cup cooked ham, diced

1 cup frozen peas

4 cups chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and sauté for another 1-2 minutes until fragrant.

      Add the diced ham to the pot, stirring until heated through, about 2 minutes.

        Pour in the chicken broth and bring it to a boil. Once boiling, add the uncooked pasta and salt and pepper to taste.

          Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the broth.

            Stir in the frozen peas and heavy cream. Cook for another 2-3 minutes until the peas are heated through and the sauce is creamy.

              Remove from heat and stir in the grated Parmesan cheese until melted and incorporated. Adjust seasoning with more salt and pepper if necessary.

                For added brightness, mix in the lemon zest if using.

                  Serve hot, garnished with fresh parsley and extra cheese if desired.
