12 oz (340 g) penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 can (14 oz) diced tomatoes, drained

2 cups fresh baby spinach

1 cup heavy cream

1 cup chicken or vegetable broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh basil leaves, for garnish

Optional: grilled chicken or sausage for added protein

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1-2 minutes).

    Stir in the diced tomatoes, allowing them to cook for another 2 minutes while stirring occasionally.

      Add the penne pasta, chicken or vegetable broth, and Italian seasoning to the pot. Make sure the pasta is submerged in the liquid. Bring to a gentle boil.

        Lower the heat to a simmer, cover, and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.

          Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese. Cook until creamy and well combined, about 2-3 minutes. If desired, add grilled chicken or sausage at this stage.

            Add the fresh spinach and stir until wilted. Season with salt and black pepper to taste.

              Garnish with fresh basil leaves before serving for an extra touch of flavor.
