12 oz (340g) fettuccine or pasta of choice

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried dill or 2 tablespoons fresh dill, chopped

1 teaspoon smoked paprika

1 cup vegetable or chicken broth

1 cup heavy cream

8 oz (225g) smoked salmon, roughly chopped

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh dill or parsley, for garnish

Lemon wedges, for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté for about 3-4 minutes until softened and fragrant.

    Add Tomatoes and Spices: Stir in the cherry tomatoes, dried dill, and smoked paprika. Cook for another 2-3 minutes until the tomatoes start to soften.

      Add Pasta and Liquid: Pour in the vegetable or chicken broth, then add the fettuccine. Ensure the pasta is submerged in the liquid. Bring to a gentle boil, stirring occasionally.

        Cook the Pasta: Reduce heat to medium-low, cover, and let it simmer for about 10-12 minutes or until the pasta is al dente. Stir occasionally to prevent sticking.

          Create the Creamy Sauce: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream and Parmesan cheese, mixing until everything is well combined and creamy.

            Incorporate Salmon: Gently fold in the smoked salmon and allow it to warm through, about 2 minutes. Season with salt and pepper to taste.
