Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 (14.5 oz) can diced tomatoes with green chilies

3 cups chicken broth

8 oz (225g) penne pasta (or your choice of pasta)

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Sauté Chicken: In a large pot, heat the olive oil over medium heat. Add the sliced chicken and cook until it’s browned and cooked through, about 4-5 minutes. Remove the chicken from the pot and set aside.

    Cook Vegetables: In the same pot, add the sliced onion and bell peppers. Sauté for about 3-4 minutes until they soften. Add the minced garlic and cook for another 1 minute until fragrant.

      Spice It Up: Sprinkle in the chili powder, cumin, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.

        Add Liquid and Pasta: Pour in the can of diced tomatoes (with juices) and the chicken broth. Bring the mixture to a simmer. Add the uncooked pasta, stirring to combine.

          Combine and Cook: Return the cooked chicken to the pot. Cover and let it simmer over medium heat for about 10-12 minutes, or until the pasta is tender and has absorbed most of the liquid, stirring occasionally to prevent sticking.

            Cheesy Finish: Once the pasta is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. If the pasta seems too dry, you can add a bit more chicken broth or water to reach your desired consistency.

              Serve: Garnish the dish with fresh cilantro and serve with lime wedges on the side for a zesty kick.
