1 lb (450g) ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (approximately 1 oz)

3 cups chicken broth

2 cups uncooked pasta (elbow macaroni or penne are great choices)

1 can (14 oz) diced tomatoes with green chilies, undrained

1 cup frozen corn

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese (plus extra for topping)

1 cup milk

Salt and pepper to taste

Optional toppings: chopped fresh cilantro, sliced jalapeños, sour cream, avocado

Instructions
 

Cook the Meat: In a large pot or Dutch oven, over medium heat, add the ground beef (or turkey). Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess grease.

    Sauté the Aromatics: Add the diced onion and minced garlic to the pot with the meat. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Add Seasoning and Liquids: Stir in the taco seasoning, followed by the chicken broth, diced tomatoes (with their juices), and frozen corn. Bring to a simmer.

        Incorporate the Pasta: Once it’s simmering, add the uncooked pasta. Stir well to combine, and ensure the pasta is submerged in the liquid.

          Cook the Pasta: Cover the pot and let it cook on medium heat for 8-10 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
