Ingredients
  

1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), chopped

1 can (15 oz) diced tomatoes (with juice)

2 cups beef broth

1 cup uncooked elbow macaroni

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1/4 cup sour cream

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

    Sauté Veggies: Add diced onion and chopped bell pepper to the pot. Sauté for about 3-4 minutes until the onion is translucent. Add minced garlic and sauté for another minute.

      Combine Ingredients: Stir in the canned diced tomatoes (with juice), beef broth, uncooked elbow macaroni, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a boil.

        Cook Pasta: Once boiling, reduce heat and cover the pot. Simmer for about 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.

          Add Cheese and Cream: Remove the pot from heat. Stir in shredded cheddar cheese and sour cream until the cheese is melted and everything is creamy.

            Garnish and Serve: Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley on top.
