One Pot Cajun Chicken Pasta

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup cherry tomatoes, halved

4 cups chicken broth

12 oz (340g) penne pasta

1 cup heavy cream

1 cup shredded Cajun or smoked cheese (like Gouda or cheddar)

2 green onions, sliced for garnish

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated. Set aside.

    Sauté the Chicken: In a large pot over medium heat, add the olive oil. Once hot, add the seasoned chicken and sauté for about 5-7 minutes until browned and cooked through. Remove the chicken from the pot and set aside.

      Cook the Vegetables: In the same pot, add the chopped onion, garlic, and bell peppers. Sauté for about 3-4 minutes until the vegetables begin to soften.

        Add Cherry Tomatoes: Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to blister.

          Combine with Broth and Pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the penne pasta. Reduce the heat, cover, and simmer for about 12-15 minutes or until the pasta is al dente, stirring occasionally to prevent sticking.

            Add Cream and Cheese: Once the pasta is cooked, stir in the heavy cream and shredded cheese. Mix until the cheese melts and the sauce becomes creamy.

              Return Chicken to Pot: Add the cooked chicken back to the pot. Stir to combine everything and season with salt and pepper to taste.

                Garnish and Serve: Remove from heat. Plate the pasta, garnish with sliced green onions and chopped fresh parsley.
