1 pound boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cups chicken broth

8 ounces penne pasta

1/2 cup buffalo wing sauce (adjust for heat preference)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Blue cheese crumbles (optional, for topping)

Instructions
 

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Combine Ingredients: Return the cooked chicken to the pot. Pour in the chicken broth, then add the penne pasta and buffalo wing sauce. Stir well to combine.

        Cook Pasta: Bring the mixture to a boil, then reduce heat to a simmer. Cover and let it cook for about 12-15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

          Add Cream & Cheeses: Once the pasta is cooked, lower the heat and stir in the heavy cream, sharp cheddar cheese, and mozzarella cheese. Mix until the cheeses are melted and everything is creamy and well-combined.

            Season & Serve: Taste and adjust seasoning with additional salt, pepper, or buffalo sauce if desired. Garnish with sliced green onions and blue cheese crumbles if using. Serve hot and enjoy!
