One-Pan Lemon Garlic Chicken & Potatoes

Ingredients
  

4 boneless, skinless chicken breasts

1 lb baby potatoes, halved

4 cloves garlic, minced

2 lemons (one for juice, one for slices)

1/4 cup olive oil

1 tsp dried oregano

1 tsp paprika

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine olive oil, minced garlic, juice from one lemon, oregano, paprika, red pepper flakes, salt, and pepper. Whisk together until well combined.

      Add the chicken breasts to the bowl and toss to coat them in the marinade. Let them marinate for about 15 minutes if time allows.

        In a 9x13 inch baking dish or a large oven-safe skillet, add the halved baby potatoes. Drizzle them with half of the lemon garlic marinade and toss to coat.

          Nestle the marinated chicken breasts among the potatoes. Pour the remaining marinade over the chicken and arrange lemon slices on top of the chicken and around the potatoes.

            Cover the dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

              After 25 minutes, remove the foil and bake for an additional 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the potatoes are tender and golden.

                Remove from the oven and garnish with fresh parsley before serving.
