4 boneless, skinless chicken thighs

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

Juice of 1 large lemon

Zest of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt, pepper, oregano, and thyme.

    Heat the Pan: In a large skillet or frying pan, heat olive oil over medium-high heat. Once hot, add the chicken thighs and sear for 5-7 minutes on each side, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (75°C). Remove the chicken from the pan and set it aside.

      Sauté the Garlic: In the same pan, lower the heat to medium and add the butter. As it melts, stir in the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

        Add Lemon and Seasonings: Stir in the lemon juice, lemon zest, and additional salt and pepper. Let the mixture simmer for about 2 minutes to reduce slightly.

          Return Chicken to the Pan: Add the chicken thighs back to the pan, coating them in the lemon garlic butter sauce. Allow them to simmer in the sauce for another 3-4 minutes, basting the chicken to enhance the flavors.

            Garnish and Serve: Remove the skillet from the heat. Sprinkle the chopped parsley over the chicken and add lemon slices for garnish. Serve immediately with your choice of sides, like steamed vegetables or rice, to soak up the delightful sauce.
