Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 cup snap peas, trimmed

1 carrot, julienned

2 green onions, sliced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry for thickening)

Salt and pepper to taste

Cooked rice or noodles for serving

Sesame seeds for garnish

Marinate the Chicken: In a mixing bowl, combine chicken pieces with soy sauce, oyster sauce (if using), half of the sesame oil, garlic, and ginger. Let it marinate for 20 minutes.

    Heat the Pan: In a large skillet or wok, heat the remaining sesame oil over medium-high heat.

      Cook the Chicken: Add the marinated chicken to the pan in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Season with salt and pepper. Remove the chicken from the pan and set aside.

        Stir Fry the Veggies: In the same pan, add the bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 3-4 minutes until the vegetables are bright and slightly tender.

          Combine and Thicken: Return the chicken to the pan with the veggies. Add the cornstarch slurry to the mixture. Stir well, cooking for an additional 1-2 minutes until the sauce thickens and coats the chicken and vegetables.

            Garnish and Serve: Stir in the green onions and give it a final toss. Serve hot over cooked rice or noodles, garnished with sesame seeds.
