4 boneless, skinless chicken thighs

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 red bell pepper, chopped

1 small red onion, sliced

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon cumin

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prep the Ingredients: Start by peeling and dicing the sweet potatoes, chopping the red bell pepper, and slicing the red onion. Mince the garlic and set aside.

    Season the Chicken: In a bowl, season the chicken thighs with paprika, thyme, cumin, salt, and pepper. Make sure they are evenly coated with the spices.

      Heat the Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the seasoned chicken thighs and cook for about 5-6 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced sweet potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften. Add the sliced red onion, chopped red bell pepper, and minced garlic. Sauté for an additional 4-5 minutes until the vegetables are tender.

          Combine and Finish: Return the cooked chicken to the skillet, nestling it among the vegetables. Cover the skillet and let everything cook together for another 5 minutes, allowing the flavors to meld. Adjust seasoning with additional salt and pepper if desired.

            Serve: Garnish with freshly chopped parsley for a pop of color, if using. Serve directly from the skillet for a rustic presentation.
