Ingredients
  

1 cup quinoa, rinsed

1 cup green or brown lentils, rinsed

4 cups water or vegetable broth

1 medium cucumber, diced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

In a medium pot, combine the quinoa and 2 cups of water or broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and let it cool.

    In another pot, combine the lentils and 2 cups of water or broth. Bring to a boil, then reduce heat and simmer uncovered for about 20-25 minutes or until tender. Drain and let cool.

      In a large mixing bowl, combine the cooked quinoa and lentils.

        Add the diced cucumber, bell pepper, cherry tomatoes, chopped onion, parsley, and mint. Gently toss until well combined.

          In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and a pinch of salt and pepper.

            Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.

              If using, sprinkle the crumbled feta cheese on top and give it a final gentle mix.

                Let the salad sit for about 10-15 minutes to allow the flavors to meld before serving. Enjoy chilled or at room temperature!
