1 lb ground chicken

1 cup finely chopped mushrooms (such as cremini or button)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 large egg

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil (for cooking)

1 jar marinara sauce (for serving)

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Mushrooms: In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped mushrooms for about 5-7 minutes until they are soft and moisture is released. Remove from heat and let cool slightly.

      Mix Ingredients: In a large bowl, combine the ground chicken, sautéed mushrooms, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, onion powder, oregano, salt, and pepper. Mix until well combined, but avoid overmixing to keep the meatballs tender.

        Form Meatballs: Using your hands, form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.

          Bake Meatballs: Drizzle a little olive oil over the meatballs and bake in the preheated oven for 20-25 minutes until cooked through and golden brown.
