1 cup pitted dates, finely chopped

1 cup raw almonds (or any nuts of your choice)

1/2 cup unsweetened cocoa powder

1/4 cup maple syrup or honey

1 tsp vanilla extract

A pinch of sea salt

Optional toppings: shredded coconut, crushed nuts, or cocoa powder for rolling

Prepare the Nuts: In a food processor, pulse the raw almonds until they form a coarse flour. Be careful not to over-process them into almond butter.

    Combine Dates: Add the finely chopped dates to the ground almonds in the food processor. Process until the mixture becomes sticky and well combined.

      Mix in Cocoa and Sweetener: Add the cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt to the mixture. Blend until everything is fully incorporated and the mixture holds together when pressed.

        Chill the Mixture: Transfer the mixture into a bowl and refrigerate for about 30 minutes. Chilling helps it firm up, making it easier to roll into truffles.
