Mint Chocolate Chip Ice Cream

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon pure peppermint extract

A few drops of green food coloring (optional)

1/2 cup semi-sweet chocolate chips

A pinch of salt

1/2 teaspoon vanilla extract

Instructions
 

In a mixing bowl, combine the heavy cream, whole milk, and granulated sugar. Whisk together until the sugar is completely dissolved.

    Add in the peppermint extract, vanilla extract, and if desired, the green food coloring. Mix well until the color is evenly distributed.

      Taste the mixture and adjust the peppermint extract to your liking, adding a bit more for an extra minty kick.

        Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until thoroughly chilled.

          Once chilled, pour the mixture into an ice cream maker. Churn according to the manufacturer's instructions, usually about 20 to 25 minutes.

            During the last 5 minutes of churning, add in the semi-sweet chocolate chips so that they are evenly distributed throughout the ice cream.

              Once the ice cream reaches a soft-serve consistency, transfer it to an airtight container and smooth the top.

                Freeze the ice cream for at least 4 hours, or until firm enough to scoop.

                  Serve in bowls or cones, garnished with additional chocolate chips or fresh mint leaves if desired.
