1 lb ground chicken

1 cup breadcrumbs (preferably Italian-seasoned)

1/2 cup grated Parmesan cheese

1/2 cup milk

2 large eggs

1/4 cup fresh parsley, chopped

4 cloves garlic, minced

1 small onion, finely chopped

1 tsp Worcestershire sauce

1 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

1/3 cup ketchup (for glaze)

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper for easy removal.

    In a large skillet, sauté the chopped onion and minced garlic over medium heat until the onions are translucent (about 3-4 minutes). Remove from heat and allow to cool slightly.

      In a mixing bowl, combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, milk, eggs, parsley, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until well combined but do not over-mix.

        Add the sautéed onion and garlic to the meat mixture and fold gently until incorporated.

          Transfer the mixture into the prepared loaf pan, shaping it gently into a loaf form.

            Mix the ketchup and 1/4 cup grated Parmesan cheese in a small bowl for the glaze. Spread this mixture evenly over the top of the meatloaf.

              Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through (internal temperature should reach 165°F or 74°C) and the top is lightly browned.

                Let the meatloaf rest for about 10 minutes before slicing. This will help the juices redistribute and ensure it’s moist.

                  Slice and serve hot, optionally garnished with additional chopped parsley for a fresh touch.
