Ingredients

2 large chicken breasts (about 1.5 lbs)

1/4 cup buttermilk

1/4 cup plain Greek yogurt

2 tablespoons Dijon mustard

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, for garnish (optional)

Instructions

Marinate the Chicken: In a large bowl, whisk together the buttermilk, Greek yogurt, Dijon mustard, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts and ensure they are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight for maximum tenderness.

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Lightly grease a baking dish with olive oil or line it with parchment paper for easy cleanup.

Bake the Chicken: Remove the chicken from the marinade and allow the excess to drip off. Place the chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.

Rest the Chicken: Remove the chicken from the oven and let it rest for about 5-10 minutes to allow the juices to redistribute.

Serve: Slice the chicken breasts and serve warm, garnished with fresh parsley if desired. Pair with your favorite sides, such as roasted vegetables or a fresh salad.
