Ingredients
  

200g feta cheese, crumbled

4 large eggs

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions
 

Preheat your oven to 200°C (400°F).

    In a medium ovenproof dish, drizzle olive oil and spread the chopped red onion and minced garlic evenly across the bottom.

      Add the halved cherry tomatoes and sprinkle with dried oregano, salt, and pepper. Toss gently to combine.

        Place crumbled feta cheese on top of the tomato mixture, ensuring it is spread evenly.

          Using the back of a spoon, create four small wells in the mixture, and crack an egg into each well.

            Drizzle a little more olive oil over the eggs and season with additional salt and pepper if desired.

              Bake in the preheated oven for about 20-25 minutes or until the egg whites are set and the yolks are still slightly runny, or to your preferred doneness.

                Remove from the oven and let it cool for a couple of minutes.

                  Garnish with fresh basil leaves and serve warm with crusty bread for dipping.
