Ingredients
  

1 lb boneless, skinless chicken breast, cubed

3 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes, with juices

4 cups chicken broth

1 cup heavy cream

1 tsp dried oregano

1 tsp dried basil

1 cup fresh spinach, chopped

1 cup parmesan cheese, grated

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic, carrots, and celery. Cook for another 5-6 minutes until the vegetables are softened.

      Add the cubed chicken breast to the pot, cooking until the chicken is browned on all sides, about 5-7 minutes.

        Pour in the diced tomatoes with their juices and chicken broth, and stir in the dried oregano and basil.

          Bring the mixture to a gentle boil, then reduce the heat and simmer for 15-20 minutes, allowing the flavors to meld.

            After simmering, reduce the heat to low and stir in the heavy cream. Let it simmer for an additional 5 minutes.

              Add the chopped spinach and grated parmesan cheese, stirring until the spinach wilts and the cheese is melted. Season with salt and pepper to taste.

                Serve hot, garnished with fresh basil leaves and additional parmesan cheese if desired.
