1 lb boneless, skinless chicken breasts

4 cups chicken broth (low sodium)

1 cup heavy cream

1 cup diced carrots

1 cup diced celery

1 cup diced onion

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1/2 cup frozen peas

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1 cup small pasta (like orzo or ditalini)

Prepare the Chicken: In a large pot, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Sauté for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the pot and set aside to cool, then shred it into bite-sized pieces.

    Sauté the Aromatics: In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until the vegetables are tender. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Broth and Herbs: Pour in the chicken broth and stir in the dried thyme and rosemary. Bring the mixture to a boil, then reduce to a simmer.
